
I love recipes that are easy. This one reuses dinner from the previous night – rotisserie chicken!!! So, if you buy a rotisserie chicken and have a smaller family like me, this is a great way to use up the rest of your chicken. Also, this isn’t really a pie. You’re substituting pie crust with biscuits and just using them to dip in your filling, or maybe it’s like soup at this point. Doesn’t matter what you call it, it’s just delicious!
Bootleg Chicken Pot Pie
Ingredients:
Rotisserie Chicken leftovers (or whatever chicken you have available, so long as it’s cooked)
6-12oz of Frozen Vegetables (we have a large bag of organic vegetables from Costco)
1-2 jars of Gravy (depends on how “saucy” you want it)
Biscuits
Step 1: Cook your biscuits according to the package. You could also go get biscuits from KFC, Popeyes, Red Lobster, etc. It doesn’t matter, but this is the pièce de résistance of the meal.
Step 2: While your biscuits are cooking, cook your vegetables according to the package.
Step 3: Combine chicken, vegetables, and gravy.
Step 4: Once your biscuits are ready, serve the “pie filling” in a bowl and you can dip your biscuits in there!
